Sweet Potato with Kale & Ginger
This is a delicious autumnal recipe helping you to stay warm and grounded during the change to the colder season. Can be served with rice and dal possibly or on it's own as a light meal.
3/4 inch Ginger (Fresh)
1/2 lb/ few handfuls Kale
2 pinches salt (Mineral Salt)
1 tbsp Sunflower Oil
2- 3 large Sweet Potatoes
Handful of chopped Coriander
1. Cut the sweet potatoes into chunks and steam until soft. Steam kale separately until leaves turn a vibrant shade of green and strain. Put both aside.
2. Grate and sautee ginger in sunflower oil for thirty seconds. Then add cooked sweet potatoes and kale. Mix gently to avoid breaking up the soft sweet potatoes.
3. Sprinkle with chopped coriander, salt and pepper to season.
